2016 Paulownia - Cabernet Sauvignon
Opaque and intensely colored, the deep purple hue of our flagship wine reflects the incredible depth and richness of this vintage. Extremely complex, with a silky smooth palate and fine tannins, its fragrant bouquet presents notes of violets, blueberry jam, mocha, and leather. The fruit delivers immense concentration and shows consistency from the very first sip all the way through to the lingering finish. Indulgent flavors of succulent blackberries, cloves, and vanilla bean crescendo with subtle hints of Provençal flowers and herbs, giving this vintage a classic elegance.
The distinctive expressions of this wine come from its place of origin. Located just north of St. Helena in Napa Valley, Glass Mountain was formed millennia ago, when a volcanic eruption ejected obsidian from deep within the earth. Today, the vineyard still retains outcroppings of volcanic glass mixed into the volcanic loam and clay soil, a unique attribute that influences the wine. Recommended serving temperature: 64°F.
